Recipe of the month! -September

Thanks to our fab follower Simone for this recipe. I haven't tried it out myself yet, but she says she loves it!

Yummy Lentils and coconut

Ingredients;
2-3 cups of dried red lentils
spinach (one frozen pack or a few bunches of fresh)
tin of coconut milk
2-3 cups of vege stock
tin of chopped tomatoes
few spoons of curry powder / chilli powder any other spices you like
one large onion chopped
one garlic clove chopped


Method;
sautee onion and garlic in oil until softened. Add spices. Stir in lentils. Add all the other ingredients and bring to boil. Simmer 20mins or more. I like to simmer for longer so it's really mushy!

All finished...happy eating!
